Soy sauce salt is a by-product of naturally fermented soy sauce (fermented for at least 6 months in clay pots under the sun), they are salt crystals formed on the side and bottom of clay pots. They have an intense rich umami flavour, great for sprinkling onto cooked meat and Chinese soups right before serving. Photo courtesy of Yuan's.
